I used to make them in a restaurant and the only way is to add a spoon of sugar and to pour the cream down the back of a spoon.

Thanks Mo4 and Clare, I had a go at this last night and.... SUCCESS! It was absolutely yummy and exactly like I've had it in a restaurant. I did it just like that chap in the video.

I just bung in a load of Baileys lol I have done one with cold cream down the back of a cold spoon..which reminds me..I have a full bottle of Baileys in my cocktail cabinet )
