Fake borscht

2 packs cooked beetroot, cut up (the vacuum-packed sort from the veg counter at the supermarket) - you can use fresh if you have it, just cook it first
2 large onions, chopped
2 sticks celery, chopped
1 largeish floury potato (King Edward etc), peeled and chopped
1.5 litres stock (can be any, but beef is good)
1/2 tsp caraway seeds (optional)
1 dsp horseradish sauce
Dollop of Worcestershire sauce

Sweat the onion, celery and potato in butter until lightly golden. Add the stock, Worcs sauce, caraway seeds and beetroot, and simmer until the veg is all soft. Liquidise. Stir in the horseradish sauce and taste. Season and add more horseradish if liked.

Serve with a dollop of sour cream or natural yoghurt in the bowl.
